When I’m working on a new dish, I’m always thinking about how some roasted veggies or some fresh-baked bread can complement and complete a meal, whether it’s for one or a jam-packed dinner table on Sunday night.
As easy as it is to get carried away in creating memorable dishes that play off each other, I never lose track of a single item’s ability to stand on its own. Start by heating our Mix Roasted Potatoes in a skillet until they begin to brown. Add some whisked eggs and mix together until set. Remove from heat and begin building your burrito. I start with a layer of grated cheese, which will melt when topped with the potato and egg mixture. Add the condiments of your choice, roll, and enjoy immediately! If you’re looking for a bit more decadence, don’t forget the avocado or some chorizo or bacon!
